Designer Meatballs

 

Designer Meatballs

 
I did this with two different types of meat. One with a mixture of regular lean ground beef, and ground pork, and the other with ground turkey. So this recipe is great for those seeking deep flavour, and the other with a fat and calorie reduction.
 
Beef and Pork Meatballs
 
1 lb lean ground beef
1 lb lean ground pork (Or two lbs ground lean turkey, instead of beef and pork)
 1 1/2 c panko bread crumbs
2 eggs
2 tsp each; oregano, basil, cumin
2 stalks celery, minced
1 medium onion, minced
1 tsp each; salt, pepper
2 tsp garlic powder, divided
1/2 c sliced button mushrooms
1/2 c Philly shredded cheese
1/2 c cooked, crumbled bacon
1 Pkg Philo pastry
1 c melted butter divided
Freshly ground sea salt
Freshly ground pepper
 
Take Philo pastry out of freezer and place in fridge early in the day
Pre-heat oven to 35o F
In a large bowl combine meat, and eggs
In a medium bowl, combine bread crumbs, oregano, basil cumin, salt pepper, 1 tsp garlic powder, and stir well
In a medium fry pan, add 2 tsps of butter, onions and celery. Cook till onions become translucent and slightly golden, set aside to cool slightly.
Return pan to stovetop and and add 2 tsp butter, and mushrooms, and 1 tsp garlic powder.
Add onions, celery and dry ingredients to meat, and mix. (Do not over mix). Shape into 1 1/2″ balls and place in an 8×10 aluminium pan.
Place meatballs in oven for 1 hr, turning them half-way.
Meanwhile, when mushrooms are golden, place on paper towels to cool. 
Sprinkle with just a little bit of freshly ground sea salt and pepper
When meatballs are done, place on a large platter with paper towels to cool.
Take Philo pastry out of fridge and place flat on counter top. Then take two large sheets of waxed paper and work with one sheet at a time. Brush sheet with melted butter and then add another on top, again brush with melted butter. Using a pizza cutter cut Philo pastry into three strips. Place mushrooms, Philly shredded cheese, and bacon. Make sure all sides are brushed with butter for the “glue”. Roll meatball with mushrooms, cheese and bacon all the way up the Philo pastry sheet, tucking in sides as you go.
 
Repeat with all meatballs. Place in a lightly greased cookie sheet in oven for 30 minutes, or until pastry is golden.
